JAPANESE-STYLE PORK AND ONION SOUP

300 g pork loins, lean, boneless -- 10oz thinly sliced
1 1/2 qts chicken stock
6 spring onions -- sliced
1 can bamboo shoots -- 250 g sliced
2 tbsp liquid dashi
1 tbsp grated ginger root
2 lg shallots -- sliced
1/2 carrot
cut into julienne strips
In a large saucepan, combine chicken stock and onions. Bring to the boil, reduce heat, cover and simmer for 10 minutes. Add sliced pork, bamboo shoots, dashi, ginger and shallots. Cover and simmer until pork is tender, about 6 minutes. Serve soup garnished with carrot strips.
Dashi is available in Oriental food stores.
