ICED TURTLE SOUP

2 tbsp gelatin
turtle soup 1 16oz can -- 500 ml or 16 oz
3/4 can water
1 tbsp dry sherry
1 tbsp lemon juice
1/4 cup sour cream
1 can caviar

1. Dissolve the gelatine in a little cold water and mix with the turtle soup.
2. Using the empty can, fill with 3/4 water and top with equal quantities of dry sherry and lemon juice. Season to taste and chill in a bowl until set.
3. Spoon into serving cups and garnish with a dob of sour cream and a sprinkle of caviar.
