HARIRA NORTH AFRICAN SOUP

350 g ground lamb -- 12oz
1 tsp chili -- minced
1 tsp ground cumin
flour
4 cups beef stock
1 cup water
2 tomatoes -- ripe skin and chop
1 chopped onion
1 stalk celery -- sliced
1 diced carrot
1 tbsp lemon juice
2 tbsp chopped fresh parsley
2 tbsp chopped fresh mint
2 tbsp coriander -- chopped

Place mince into a bowl with chilli and cumin. Mix well and shape into small balls. Roll in flour and set aside.
Place stock, water, tomatoes, onion, celery and carrot into a large saucepan. Bring to the boil, cover and simmer for 30-35 minutes.
Add meatballs to soup, simmer for 10 minutes. Stir in lemon juice to caste sprinkle with herbs and serve hot.
