CREAMY CHOWDER OF SOUTH AUSTRALIAN OYSTERS

1 lg onion
100 g Double smoked Bacon
1 stick celery 1/2cm diced
1 1/2 tsp flour
1 liter chicken stock
1/2 bunch spring onions -- chopped
1/2 tbsp parsley -- chopped
12 lg Pacific Oysters
1 deciliter cream
1 pinch black pepper

Fry onions, bacon & celery in butter - do not colour. Tthen add flour, coat well. Add stock and allow to simmerabout 10 minutes. Add herbs, spring onions and oysters and heat gently - do not boil Stir in cream and season with black pepper. Garnish with fresh Chervil.
