CLAM AND MUSHROOM SOUP - HAMAGURI SUMASHI-JIRU

8 clams -- or oysters whole
1 pinch salt
8 button mushrooms -- caps
8 watercress sprigs
1 tsp soy sauce
1 pinch salt
1/2 cup saki -- or dry sherry
4 pieces lemon rind

Clean and scrub shells. If you use clams soak in fresh water for a couple of hours before using..
Place 4 cups of water and shells in a saucepan and bring to the boil. Fast simmer until shells open. Discard any that do not.
Sift any debrie or scum and rerturn to hot plate. Add Mushrooms and watercress to water and bring to the boil. Simmer for about 1 minute.
Stir in sake/sherry and soy sauce. Bring to the boil. Turn to simmer.
Place 1 section of lemon rind in each of four bowls and divide soup among bowls.
Serve at once.
