CHILLED YOGHURT AND DICED HAM SOUP

200 g cooked ham -- 7oz finely diced
3 lg cucumbers
1 tsp salt -- if desired
2 cl garlic -- peeled and crushed
2 tbsp vinegar
1 lg onion -- peeled and chopped
1 tsp fresh dill -- chopped
1 cup yogurt
2 tsp fresh mint -- chopped
2 tbsp olive oil

Peel the cucumbers, cut in half lengthwise, remove the seeds and chop coarsely. Sprinkle with salt and set, aside. In a large bowl, combine garlic, vinegar, onion and dill. Add the salted cucumbers to this mixture. Stir in yogurt and place mixture in a blender and puree. Remove to a large bowl and add finely diced ham. Cover and chill for several hours. When ready to serve, sprinkle with mint and olive oil.
