CAULIFLOWER-BACON SOUP

Amount Measure Ingredient -- Preparation Method

4 cans chicken broth
1 head cauliflower -- cut into florets
1 med onion -- finely chopped
1 tsp thyme
1/2 lb bacon -- chopped
1 cup shredded Cheddar cheese

Combine broth, cauliflower, onion,
And thyme in large pot & bring to a boil over high heat.
Reduce heat to medium-high and boil 10 minutes or until cauliflower is tender.
While cauliflower is cooking, fry bacon until crisp,
Drain on paper towels and crumble bacon.
Add it to broth mixture. Simmer 3 to 5 minutes.
Season to taste with salt and ground black pepper.
Ladle into bowls and sprinkle with cheese.
Serves 8.
