AVOCADO SOUP WITH MARINATED ONION

- MARINATED ONIONS:-
3/4 lg red onion -- peeled and diced
1 tbsp lemon juice
1 1/2 tsp sea salt
1 tsp splenda
- AVOCADO SOUP-
1/2 tsp cumin seed
1/2 tsp coriander seed
1 cl garlic
peeled and chopped finely
1 jalapeno chile pepper -- chopped finely
1 tbsp lemon juice -- or 1/2 fresh lemon
2 lg avocados
ripe , peeled and stones removed
1 pt chicken stock -- 570ml
or vegetable stock - chilled
1 pt water -- add for volume
salt and freshly ground pepper
To prepare the onions: combine all the ingredients in a small bowl. Cover and set aside.
To make the soup: dry-roast the cumin and coriander seeds in a heavy-based frying pan over medium heat until fragrant and lightly browned. Remove the spices and grind to a powder with a mortar and pestle. Put the spices. garlic. chilli, lemon juice, avocado and stock in a food processor and process until the mixture is smooth.Add water to make up volume. Chill and serve in bowls with a spoonful of marinated onion.
