ASPARAGUS SOUP2

1 tbsp olive oil
1/2 lg onion -- thinly sliced
1 cl garlic
2 lb asparagus spear -- 1k coarsely chopped
2 cups vegetable stock
1/2 cup heavy cream
2 tbsp butter
Heat oil in a large saucepan over med heat
Add onions garlic and asparagus saute until soft
Add stock and bring to a boil Simmer for 5-10 min
Add cream and butter,bring back to a boil for 2 min and remove from heat.
Season with salt and pepper
Puree mixture in a blender until smooth
Heat soup and adjust seasonings.
You might have to add more stock to reach preferred consistency.
