ARTICHOKE SOUP

2 cans artichoke hearts
2 med onions -- chopped
1/4 cup olive oil
1/4 cup butter -- ( 1/2 stick)
2 cl garlic -- chopped
2 tbsp parsley -- chopped
1 tbsp Italian seasoning
2 tbsp lemon juice -- fresh
2 cans cream of chicken soup
1 can chicken broth
3 cups water
1 dash Tabasco sauce
Salt and pepper to taste

Sauté onions and garlic in oil and butter until soft, Drain artichoke hearts and cut in half. Add artichoke hearts to mixture and cook for 2 minutes stirring constantly, Add cream of chicken soup, chicken broth, parsley, Italian herbs, lemon juice, Tabasco and water, while each is added. Cover and simmer over low heat for one hour, stirring occasionally.
