ALMOST AVGOLEMONO SOUP

3 cups chicken broth
2 lg eggs -- seperated
1 lemon
salt and pepper -- to taste

-Heat broth in a saucepan bring to a simmer.
-While soup is heating, beat egg whites until high and fluffy.
-Beat in yolks until the mixture is lemon colored; beat in lemon juice.
-Slowly add 1 cup of the broth to the egg mixture and continue beating.
-When egg-soup mixture is blended, return to saucepan and simmer until all ingredients are heated thru.
-**Do not let soup boil as it will curdle the eggs.
-Per serving:6.1 carbs and 15 grams protein.
NOTE:
Traditional avgolemono soup usually has rice or orzo pasta in it but either of those is too high in carbs.This is a modified version with the same lemony flavor.
