WHITE CLAM CHOWDER

1 med cauliflower, head
1/2 cup butter
1 tbsp minced garlic
1/2 cup chopped green onions
salt and pepper -- to taste
1 cup clam broth
1/2 cup dry white wine
1 1/2 cups canned clams -- with juice
3 cups cream
In a soup pot, steam the cauliflower until very tender. Drain and chop into small pieces. In the empty pot, melt the butter. Return the cauliflower to the pot and add the garlic, green onion, salt and pepper. Cook on med heat for about 3 or 4 min while stirring.
Add the clam broth and white wine and bring to a gentle boil. Add clams with their juice.
In the microwave, heat the cream for about 4 min and then add it slowly to clam base. Simmer an additional 10 min or until the soup thickens, stirring constantly to avoid scorching.
