SPICY CLAMS IN LIME BUTTER

Amount Measure Ingredient -- Preparation Method

50 Florida clams -- 1" 2.5cm
1/4 cup chopped cilantro
2 tsp minced garlic
1/2 cup white wine
1 tbsp chopped jalapeno peppers
- LIME BUTTER-
1/2 cup butter
1/4 cup lime juice

Butter: Melt butter and add limejuice.
Serve with Spicy Clams.
Clams: Rinse clams and drain.
In large sauté pan with lid bring remaining ingredients to a boil.
Add clams and cover. Cook 5 to 7 minutes or until clams open.
Serve with Lime Butter.
