SAUTEED SOFT-SHELL CRABS

2 tbsp tofu -- or soy flour
2 tbsp hazelnuts, dry-roasted -- ground
salt and pepper to taste
6 crab -- soft shell
washed and patted dry
1 tbsp butter
1 tbsp olive oil
Crispy and delicious, these soft-shell crabs need only a drizzling of lemon juice and a dollop of Caper Tartar Sauce to make a succulent seafood entree.
Stir together the tofu flour, ground hazelnuts, salt, and pepper on a large plate. Dredge the crabs in this flour mixture, shaking off any excess. Heat the butter and oil in a large, heavy skillet over medium-high heat until the foam subsides. Saute the crabs for 4 to 5 minutes on each side, or until lightly browned. Drain on paper towels and serve immediately. Serves 2 or 3
