OYSTERS WITH GARLIC BUTTER

Puff Pastry
36 oysters -- freshly opened
1 egg
1 pinch salt
rock salt
GARLIC BUTTER
200 g butter -- softened unsalted
2 cl garlic -- chopped to a fine
paste
3 tbsp parsley -- fresh finely chopped
2 tsp lemon juice
Preheat oven to 425°F-220°C. To make the garlic butter, blend all ingredients in a food processor, then scrape into a bowl.
Roll puff pastry very thinly. Cut small rounds that will fit over oyster shells. Place a dab of garlic butter on each oyster. Beat egg with salt, then brush around rim of shell and press on puff pastry. Trim excess with a sharp knife. Arrange pastry-lidded shells on rock salt on a baking tray, well apart. Lightly brush pastry with egg. Bake for 8 minutes until pastry is brown and cooked. The oysters should have just started to frill at the edges and the butter should have melted by the time the pastry is cooked.
