Oysters with Onion
Mix finely chopped shallot or red onion with very good wine vinegar, coarsely cracked pepper, a little oil and some finely chopped spring onion greens or watercress leaves and spoon over freshly opened oysters.
Seasoned Oysters
Toss oysters, their Juices, a few drops of Tabasco or chilli sauce, chopped spring Onion and a rough julienne of rocket or spinach leaves, then moisten with olive oil and spoon back into the shells. Serve with a bowl of hot tomato relish.
