JAMAICAN SEAFOOD MEDLY

2 tbsp brown sugar twin
or use 2 tbsp splends + 1/2 tsp molasses
1 1/2 tbsp orange juice
1 1/2 tbsp lime juice
2 cloves minced garlic
1/2 tsp minced ginger
1 tsp grated orange rind
1 tsp grated lime rind
1 tsp salt
1/2 tsp black pepper
1/8 tsp ground cinnamon
1 dash ground cloves
1/2 tsp Tabasco sauce
1/2 lb orange -- 250g
roughy cut into bite sized pieces
1/2 lb sea scallops -- 250g cut in half
1/2 lb shrimp -- 250g shell & devein
1 tbsp olive oil
3/4 cup baby corn
snapped in fourths
1 tbsp sliced green onions
1/2 green pepper -- julienned

Combine marinade ingredients.
Pour over seafood and mix well.
Cover and refrigerate at least 2 hours.
Drain seafood and discard marinate.
Saute seafood and vegetables in olive oil for 15 minutes or until done.
