HERBED OYSTERS WITH FENNEL

20 oysters -- shucked in shells
1/2 cup melted butter
1/2 cup fennel -- chopped
1/2 whole onion -- chopped
2 tbsp coriander -- chopped
1 sm chili pepper -- de seed, chop
2 tbsp chives -- chopped
1 pinch salt and pepper -- to taste
saute fennel and onion in half of the butter until soft. Add all other ingredients but the oysters. Cook a further 2 minutes. Place oysters on grilling tray and spoon sauce over each until all sauce is used. Grill for about 2 minutes. Serve on rock salt or al- foil base. Garnish with sprigs of what ever herbs you have at hand.
