GINGER MUSSELS

1 cup chicken broth
1 lb mussels -- 500gr clean, de bear
8 whole scallions -- bias sliced 3"-80mm
2 tbsp fresh ginger -- or dried
1 tbsp peanut oil
1/2 cup dry white wine
1 tbsp oyster sauce
1 tsp soy sauce
1 tsp sesame oil
1 tsp molasses

Place half of the stock in a pot over the mussels. Steam for about 5 minutes until shells open. Discard any mussels that do not open. Remove and drain mussels. Sauté ginger, onions for 2 minutes. Add wine and cook a further 2 minutes. Add the rest of the ingredients and cook another 3 minutes. Add mussels and cook just enough to heat. Remove mussels to serving plate and pour remaining sauce over them.
