GIGI'S CRAB CAKES

1/4 cup olive oil
1/2 cup Bermuda onion -- finely minced
1/4 cup chopped green bell pepper
1/4 cup finely chopped celery
1/2 tsp sea salt
1/2 tsp cayenne pepper
2 green onions -- finely chopped, incl
2 tbsp finely chopped fresh parsley
1 lb crab meat -- 454g
1/3 cup Atkins Bake Mix -- or whey protein isol
1/4 cup mayonnaise
1 egg -- slightly beaten
2 tbsp grated Parmesan cheese
1 tsp minced garlic
Lightly sauté the onion, bell pepper, celery, salt and cayenne for about 5 minutes, stirring occasionally until tender.
Stir in green onion and parsley and cook one more minute.
Put mixture in bowl, add crab, crumbs, or Atkin's mix.
Add mayonnaise, egg and cheese.
Stir gently.
Using 1/4 C of the mixture, form into a 2" - 50mm wide cake.
Place in non-stick pan with 2 T olive oil.
Cook until lightly browned (about 6 minutes.
Turn and continue baking about 6 more minutes.
