GARLIC CLAMS & TOMATO

2 kg clams -- 4 lb
1 tbsp sea salt
1/4 cup olive oil
2 cl garlic -- chopped
1/2 cup fresh parsley sprigs -- loosely packed
2 tbsp lemon juice
1/2 lg onion -- finely chopped
1/2 cup dry white wine
2 lg tomatoes
quartered, seeded,chopped

Wash and soak clams in salty water for 30 minutes. Drain and dry clams.
Blend oil, garlic, parsley and juice until well combined.
Saute onions in oil mixture until soft. Add wine and clams. Cook stirring occasionaly for 7 or 8 minutes. Clams should be open. Discard any that don't.
Remove clams with slotted spoon to large bowl; reserve half cup cooking liquid, discard the remaining liquid.
Combine reserved liquid and tomatoes, pour over clams to serve hot.
