12 oysters
salt and pepper
1 tbsp bread crumbs, seasoned
1 egg -- beaten
4 tbsp olive oil -- for frying
2 tbsp lemon juice
1 tsp chopped parsley

1. Drain the oysters for an hour. Never wash. Dry and roll lightly in seasoned bread crumbs.
2. Dip them in the beaten egg and again roll them in the crumbs.
3. Melt enough oil or butter and lard to make it 1 cm 1/2 inch deep in the frying pan and make it quite hot.
4. Fry the oysters a light golden brown on each side and serve immediately with parsley and lemon juice.

These are also delicious served with Tartare Sauce.
