4 oz unsalted butter -- 125gr
1/2 lg green onion -- minced
1/4 cup fresh parsley -- finely chopped
1 tbsp flour -- use soy or isolate
1 pt cream -- 570ml
1/2 lb Emmenthaler cheese -- 250g swiss grated
1 tbsp dry sherry
1 lb lump crabmeat -- 500g
1/4 tsp cayenne pepper
Salt to taste
This rich and elegant crabmeat dish makes an excellent all purpose appetizer.
Melt the butter in a saute pan and saute the onions and parsley until the onions are translucent. Blend the flour and cream, and add to the pan. Add cheese, and stir until melted. Add the remaining ingredients, stir, then fold in crabmeat. Serve immediately or hold in chafing dish.
