CRAB SOUFFE

8 egg
1/4 cup heavy cream
1/2 lb cream cheese
2 scallions -- diced
1 can crab meat
4 oz canned mushrooms
1/4 tsp garlic salt
1/4 tsp paprika
1 dash pepper
1/4 tsp lemon extract
2 oz grated cheddar cheese -- 60gr
Beat egg with cream and seasoning.
In an 8 x 8" 230x230mm casserole dish make a layer of half of the mushrooms, then half of the scallions, half of the crab, and half of the cream cheese, and half of the egg mixture. Repeat.
Cover with cheese and sprinkle of paprika. Bake at 350°F-180°C for about 45 min. Let cool for 5-10 min. before cutting.
This is also good cold.
