Amount Measure Ingredient -- Preparation Method

400 g crab meat -- 13oz cooked, flaked
60 g butter -- 2oz
2 chopped onions
2 red peppers -- chopped capsicum
2 sticks celery -- sliced
3 cl minced garlic
1/2 cup mayonnaise
1 tbsp worcestershire sauce
2 tbsp chopped parsley
1/2 cup pork cracklings -- crushed not too fine
or LC bread crumbs
30 g butter -- 1oz
1/4 tsp paprika

saute onion, peppers, celery and garlic in a little butter until tender. Stir in mayonnaise, Worcestershire sauce, parsley and crab. heat for a minute or two.
Spoon equal amounts into 4 oven proof ramekins( 1 cup size). Combine bread crumbs, or pork rinds, with paprika. Sprinkle over crab mix and bake in moderate oven for 15 minutes or until golden brown on top.
