CHINESE BATTER FRIED OYSTERS

24 oysters -- freshly opened
1 tsp salt
1 pinch salt and freshly ground black pepper
2 cups peanut oil -- for deep-frying
BATTER
1 cup soy flour
2 tsp baking powder
1 tsp salt
2/3 cup water
1 egg -- beaten
1 tbsp oil

Tip oysters from their shells into a bowl. Rub gently with salt for 1 minute. Rinse under cold water. Drain and set aside. Bring water to a boil in a saucepan. Dip oysters in and out of water for about 10 seconds until frilly and firm. Drain on kitchen paper and sprinkle with pepper.
To make the batter, mix soy flour, baking powder and salt in a bowl. Make a well and stir in water. Add egg and oil and stir until batter is smooth. Heat oil for deep frying to 350°F-180°C Dip each oyster in batter drain excess and deep-fry, several at a time, until a medium brown, about 3 minutes. Drain on crumpled kitchen paper. Serve immediately with a spiced salt or chilli sauce.
