BAKED DEVILLED CRAB

2 lg mud crabs
1 tbsp butter
2 tbsp spring onions -- finely chopped
1 tsp chili powder
2 tbsp soy flour
1/2 cup cream -- plus 1/4 cup water
2 tsp fresh dill -- chopped
2 tsp English mustard -- dijon for a milder t
2 tsp Worcestershire Sauce
1/2 tsp chili powder
2 eggs -- separated. Whip whi
salt and pepper -- to taste
2 tsp butter


Remove top shells carefully. Then remove all crab meat from body and claws. Discard all shells.
Saute spring onions in butter until soft. Add flour and stir for a minute or two without browning. Add cream and water and stir until mixture comes to the boil and is smooth and thick. Remove from heat, add dill, mustard, Worcestershire Sauce, chilli powder and egg yolks.
Mix in crabmeat and season with salt and pepper to taste, then fold in stiffly beaten egg whites.
Fill crab shells with mixture and dot with small dabs of butter. Bake in a moderate oven 180C (350F), for about 20 minutes or until golden brown. Or if you prefer, as an entree, divide mixture among 4 ramekins and bake for about 15 minutes. garnish with chopped parsley.
