TURBOT OR HALIBUT WITH CHEESE MUSHROOM SAUCE

1 turbot -- or halibut steak
not Less than 2” 5cm thick
1 lb mushrooms -- 454g
2 eggs
2 tbsp whipping cream
8 oz grated cheddar cheese -- 250g or Gruyere
Lemon juice
Salt and freshly ground black pepper
1 cup butter
1/2 cup dry white wine
Fresh herbs
4 oz soy protein isolate

Place the fish on a flat ovenproof casserole suitable for serving at table.
Pour in the wine and put in the butter.
Season well with lemon juice, salt and pepper.
Cover with foil and bake in a moderate oven — 350°F-180°C (gas mark 4), till the flesh is just beginning to come away from the bone.
While this is cooking cut the mushrooms into small cubes and set cooking gently in a mixture of oil and butter.
Season lightly, and add just a suspicion of finely chopped fresh herbs.
When the mushrooms are cooked stir in isolate and bring the mixture to boiling point.
Cook until the liquid is absorbed by the isolate and the mixture is firm.
Beat the eggs with the cream, add the cheese and seasoning, and keep this separate.
Take the fish from the oven, remove the foil, spread in a thick layer the mushroom mixture.
Now run the egg and cheese sauce over the mushrooms and brown under the grill or in a hot oven.
