4 red snapper or halibut fillets -- (5-6oz. each)
1 tbsp fresh lemon juice
1 can stewed tomatoes -- (8 oz) undrained
2 tbsp hot salsa -- or 1 Tbsp. minced
jalepeno peppers
1 tsp ground coriander
1/2 tsp dried oregano leaves -- crushed
1 1/2 cups Mexican Cheese Blend

Place fish in single layer in shallow baking dish or casserole. Sprinkle lemon juice over fish. Combine tomatoes, salsa, coriander and oregano; spoon over fish.
Bake at 450°F-230°C about 20 minutes or until fish is opaque. Sprinkle cheese evenly over fish. Let stand 3 minutes or until cheese is melted.
