SAUTEED COD WITH LEMON-PARSLEY SAUCE

1 tbsp butter
1 tbsp olive oil
3 cl garlic -- thinly sliced
1/2 cup chopped onion
1 lb cod fillets -- 500g
1/2 lemon -- juiced
1 1/2 tbsp chopped fresh parsley -- flat-leaf
1 tbsp fresh thyme -- or 1 tsp dried
salt and pepper to taste
Cod has a very delicate flavor and texture, so it tends to fall apart when sautéed. Don't worry about a less-than-perfect presentation as the taste makes up for it.
Heat the butter and oil in a skillet over medium-high heat until the foam subsides. Add the garlic and sauté, stirring, for 5 seconds. Add the onion and sauté for 1 minute. Add the cod and sauté for 5 minutes, turning once (the fish will crumble). Add the lemon juice, parsley, thyme, salt, and pepper. Cover the skillet and cook the fish about 2 minutes, until the cod is opaque and flaky.
Serve immediately.Serves 2
