3/4 lb swordfish steak -- 375g 1' - 25mm
1/2 lime -- juiced
1 tbsp freshly ground coriander seeds
2 tbsp freshly ground black pepper
1/4 cup hazelnuts -- coarsely ground
salt to taste
2 tbsp butter -- softened
Meaty, rich swordfish makes a perfect foil for this spicy, aromatic crust. Serve with Cucumber in Cream Sauce
Preheat the broierl/griller. Drizzle the swordfish with the lime juice and broil/grill for 3 minutes on each side. Meanwhile, combine the coriander, peppercorns, hazelnuts, and salt in a bowl and mix well. Let the swordfish cool slightly. Pat the peppercorn mixture on all sides of the fish and dot with the butter. broil/grill the swordfish for 4 minutes, turning once. Serve immediately. Serves 2
