OVEN CRISPED FISH

low carb bread 1 slice -- processed to crumbs
1/4 cup crushed pork rinds
2 tbsp parmesan cheese
2 tsp lemon zest
3/4 tsp marjoram
1/2 tsp paprika
1/4 tsp thyme -- dried
1 dash garlic powder
3 tbsp lemon juice
2 tbsp white wine
1 lb cod fillets

Heat oven to 425°F-220°C Spray bottom of 13x9x2" 230-330mm pan with cooking spray. Mix bread crumbs and crushed pork rinds with cheese, lemon peel, marjoram, paprika, thyme, and garlic powder in larg bowl. Set aside. Combine lemon juice and wine in shallow pan. Rinse cod fillets and pat dry. Dip each
fillet in lemon juice mixture and then in crumbs. Make certain each piece is well coated. Place fish in pan. Spray top of fillet evenly with cooking spray. Bake at 425°F-220°C for 20-25 minutes or until fish flakes easily when tested with a fork.
