LEMON AND PEPPER GRILLED HALIBUT

1/4 cup fresh lemon juice
1 lg garlic clove -- pressed
12 oz halibut fillet -- 1 1/2 -inch thick
2 tsp olive oil
1 tsp grated lemon rind -- or minced
lemon wedges
Place lemon juice and garlic clove in small dish. Add halibut and turn to coat. Refrigerate 30 minutes to 1 hour.
Preheat barbecue (medium-high heat). Brush halibut with olive oil. Rub with lemon peel. Season generously with pepper. Season with salt. Grill halibut until cooked through, turning once, about 8 minutes. Transfer to plates and serve with lemon wedges.
I grilled this on the George Foreman grill for about 6 minutes.Delicious!
This recipe make a fabulous halibut dish. It is written for outdoor grilling, but I used my George Foreman grill with great success.
