GRILLED MUSTARD SWORDFISH

- BUTTER-
1 tbsp coarse mustard
4 tbsp butter -- softened
1 shallot -- finely chopped
salt and pepper -- to taste

4 swordfish steaks

2 tbsp olive oil

Combine BUTTER ingredients and mix well. Roll in plastic wrap and place in freezer.
Brush all sides of fillets with oil and grill each side for about 3 minutes.
Remove butter from freezer and slice. Place one or two slices on each fillet and serve on a bed of lettuce and garnish with lemon slices and parsley.
