Seafood Fish-Flounder-Sole

1 cup soy protein isolate
1/2 tsp salt -- 1/4 tsp pepper
2 lb flounder -- 1kg
4 tbsp butter
2 tbsp oil
2 tbsp lemon juice
1/2 tsp lemon zest -- grated (optional)
1 tbsp dried parsley
1 tbsp capers -- chopped

Combine protein powder, salt and pepper in bowl. Dredge fish to coat both sides. Melt 2 tablespoon butter with oil in skillet. Add fish and cook, turning once, til browned outside and cooked through (5-7 min.) Remove to platter and keep warm. Add remaining butter to skillet and cook over med high heat til browned, about 1 min. Stir in lemon juice, zest, parsley and capers and pour over fish.
