FISH FILLETS ALMONDINE

1/2 cup butter
1/2 cup almonds -- slivered or sliced
2 lb halibut fillets -- white
bass, halibut, trout, or any other mild,
white-fleshed fish.)
salt and white pepper -- to taste
1 tbsp lemon juice
chopped parsley for garnish -- (optional)
Rinse and dry fish fillets. Season with salt and pepper and set aside.
In a lg skillet, saute almonds in butter until golden.
Remove almonds with a slotted spoon and set aside.
Add fish fillets to pan and fry over med heat (turning only once) until fish is golden brown on both sides and flakes easily, approximately 3-4 minutes per side.
Remove fish to a platter and keep warm.
Combine almonds and lemon juice to pan drippings.
Heat and pour over fish.
Garnish with parsley to add a bit of color.
