COD FILLETS CRUMBED

1 lb cod fillets -- 500g
2 tbsp butter -- melted
1/4 cup graham cracker crumbs
1 tbsp chopped parsley
1 dash salt
1 dash pepper
1 dash paprika
Microwave Directions: Cut cod into serving sized pieces. Coat on all sides in about 3 tbsp. melted butter. Place in microwave proof dish. Combine bread crumbs, parsley, seasonings and 1 tbsp. melted butter. Sprinkle crumb mixture over cod. Cover with plastic wrap; microwave at medium 3 minutes. Rotate dish 1/4 turn; microwave at medium 2 to 4 minutes longer or until cod flakes easily when tested with a fork. Serve with lemon wedges.
Oven Directions: Cut cod into serving-size pieces. Coat on all sides in about 3 tbsp. melted butter. Place in baking dish. Combine bread crumbs, parsley, seasonings and 1 tbsp. melted butter. Sprinkle crumb mixture over cod. Bake at 450°F-230°C 8 to 10 minutes or until cod flakes easily when tested with a fork. Serve with lemon wedges.
