BROILED CATFISH ( ADAPTED FOR THE GEORGE FOREMAN GRILL)

Seasoning Mix:
1 tbsp salt
2 tsp ground cumin
2 tsp onion powder
2 tsp chipotle peppers -- dried, ground
1 1/2 tsp cayenne pepper
2 1/2 tsp garlic powder
1 tsp ground bay leaf
1 tsp ground cinnamon
1 tsp ground coriander
1 tsp black pepper
1 tsp dried ancho peppers -- ground
3/4 tsp white pepper
1/2 tsp ground cloves
1/2 tsp ground mace
For Catfish:
6 6 oz catfish fillets
2 tbsp olive oil
TO GRILL:
Combine the seasoning mix ingredients in a small bowl. Preheat the Grill.
Brush each fillet with olive oil, sprinkle one side of each fillet with 3/4 tsp of the seasoning mix. Season the other side with 3/4 tsp of the seasoning mix too. Grill the fillets until the tops are browned but not burned, about 4 minutes.
