25 fresh mint leaves -- chopped
1/2 tsp splenda
2 tsp lime juice
3 tsp white wine vinegar
1/4 cup egg whites
3/4 cup olive oil
Add the egg whites, mint, sugar, lime juice and vinegar to the canister of a blender and pulse a few times to blend. Then turn on the blender
to run on high speed and pour in the oil in a thin stream through the hole in the lid. Blend for several minutes until the mixture thickens to the consistency of mayonnaise. (You may have to pause after a minute or so to scrape down the mixture from the sides of the canister with a rubber scraper.)
