LOW CARB MAYONNAISE

2 whole eggs
1 1/2 cups oil
In food processor start the motor.
Very slowly drizzle 1 1/2 cups oil.
This mixture will become very thick.
At this point it is extremely bland.
I add white vinegar - 1 teaspoon at a time until I get the flavour right.
The more vinegar you add at this point the runnier the consistency of the mayonnaise.
Add whatever other seasonings you like. ( usually 1 teaspoon dry mustard) Tony's Note
Salt doesn't seem to work with this ( I've had to throw some batches out)
Some people like their mayo sweet - if you do add some splenda.
I personally can't stand sweet mayo.
The original PRAISE mayo was never sweet.
All this takes only minutes., and you get about 2 jars out of it.
It keeps very well in the fridge.
I use canola oil, only because I like using canola oil.
I wouldn't use olive oil as the flavour would be too strong.
I've also made it in the Bamix, but its easier in the food processor.
If using the bamix, halve the ingredients.
