FRENCH STYLE MAYONNAISE

4 egg yolks -- room temperature
4 tsp lemon juice
or white wine vinegar
1/2 tsp salt
white pepper
1 tsp prepared mustard
3/4 cup olive oil
boiling water
Place egg yolks into a large bowl and stir with a wooden spoon for about three minutes.
Add the salt, mustard and pepper.
Add the oil now, dropping a little in at a time, until the mixture begins to thicken.
Once this is done more can be added a little faster making sure all the oil is absorbed before a little more is added.
when all the oil has been used up, the mayonnaise should be stiff and shiny.
Taste and season if necessary.
Beat in a little boiling water, a tsp at a time, until the mayonnaise is a creamy texture.
Add the lemon juice or vinegar to taste
