1/4 cup egg whites
2 tsp white wine vinegar
1 tsp lemon juice
2 tsp Dijon mustard
freshly ground black pepper
3/4 cup peanut oil
or other light vegetable oil

Add the egg whites, vinegar, lemon juice, mustard and pepper to
the canister of a blender or food processor and pulse a few times to combine.
Then add the oil and blend until the mixture thickens, about two minutes. If
using a blender, you should stop the blending after a minute or so and use a
rubber scraper to push mayonnaise down from the sides of the canister. (You may
also want to use a hand-held immersion blender for this. If you have one, add
all the ingredients to a bowl, immerse the end of the blender in them and blend
until the mixture thickens.)
