ANCHOVY WINE SAUCE (SALSA DI ACCIUGHE E VINO)

60 g anchovy fillets -- (2 oz lb)
1 clove garlic -- crushed
1/4 cup dry sherry -- (62.5 ml)
2 tbsp chopped parsley

Saute garlic in the oil from the anchovy tin for three minutes.
Add anchovies and mash to a paste.
Add sherry and bring to boiling point.
Remove from heat and add parsley.
Mix well.
