HOT CHICKEN SALAD

4 cups cooked chicken -- cubed
2 stalks celery -- chopped
1/4 cup minced onion
1 cup mayonnaise
1 cup grated cheddar cheese

I take this wherever I go and its always a huge hit.I also now get requests to bring it.

Its the easiest to make too!
Mix all ingredients in bowl, saving back a bit of cheese.
Pour into a casserole dish.
Sprinkle on remaining cheese.
Bake at 350°F-175°C for 15 mins or until hot and bubbly.
This is EXCELLENT! I've also varied it by adding artichokes, or brocolli, or black olives, or anything that goes well with chicken.
Have also taken this to pot luck lunches and it's a real hit!
