GUACAMOLE (SANTA BARBARA, CA STYLE)

3 avocados
1 tbsp lime juice -- or lemon
SALSA
4 tomatoes -- chopped, with skins
1 green onion -- chop all
1/4 cup chopped onion
1 jalapeno peppers -- 2 if you like it hot
1 anaheim chili pepper -- chopped
1 tbsp olive oil
1 dash tabasco sauce
1 tbsp lemon juice
2 tbsp fresh cilantro leaves
salt and pepper to taste
Prepare salas 2 hours ahead of making the rest of the recipe. Chop all ingredients and place in covered bowl in refrigerator to marinate flavors. Keeps for a week.
Using a fork, Mash 2-3 ripe avocados in a bowl. Add 1 Tbs lemon or lime juice. The prepared salsa and salt and pepper to taste keep tightly covered and refrigerated until serving.
