EGGPLANT AND HAM SALAD

1 lg eggplant
1/2 cup olive oil
1 cl garlic -- crushed
1/4 cup chopped parsley
250 g ham -- 1/2lb diced
1 lg red pepper -- chopped
3 tbsp olive oil
1 tbsp lemon juice
salt and pepper
1. Dice the eggplant (do not peel) and saute gently in the olive oil.
2. Add the garlic and the parsley. Mix well but carefully
3. Add the ham and the peppers which have been chopped to the eggplant mixture.
4. Mix the oil, lemon juice, salt and pepper and pour over the salad.
5. Toss gently and chill.
