CRAB MEAT COCKTAIL

2 tbsp tomato paste
2 tbsp olive oil
2 tbsp cream -- sweetened
1 pinch salt and pepper
1 pinch paprika
1/2 cup mayonnaise
2 tsp tomato sauce
1 tsp splenda
1/2 cup brandy
2 tbsp dill -- leaves minced
wine vinegar to thin to taste
1/2 kg lobster meat, cooked -- or crab 1lb
mushrooms -- heads only
asparagus tips
lettuce

Blend tomato paste with oil, cream, salt, pepper and paprika and add mayonnaise. Beating with a whisk, blend in the tomato sauce, splenda, brandy and dill leaves (the flavour should be slightly alcoholic). Thin with vinegar to taste. Pour this sauce over lobster or crab meat. Blend in boiled sliced mushroom
heads, asparagus and tips . Serve in cocktail glasses lined with shredded lettuce. Serves 4-6.
