CRAB & CUCUMBER SALAD

4 sm lettuce leaves -- crisp
1/2 cucumber -- peeled
1/2 tsp salt
225 g crab meat -- cook,flaked, 8 oz
2 tbsp ginger root -- grated
2 tbsp sour cream
1/2 tsp chili sauce -- sweet

Arrange the lettuce leaves in individual glass cocktail dishes. Cut the cucumber in halves lengthways, scoop out and discard the seeds. Thinly slice cucumber, sprinkle with salt and immerse in cold water for 20 minutes. Drain and pat dry with a paper towel. Arrange the crab and cucumber on the lettuce leaves and sprinkle with juice squeezed from the grated ginger. Blend the sour cream with the chilli sauce and spoon over the salad.
