COLD AVOCADO AND SCALLOP SALAD

1 kg scallops
2 avocados -- ripe
1 bunch curly endive
1 bunch radicchio
green pawpaw 1 med
1 carrot -- medium-sized
Dressing
1 cl garlic
1 sm fresh ginger
juice of 1 lemon
salt and pepper
1 cup oil

Remove veins from scallops, rinse and dry. Steam scallops in small pan with a little water, salt and pepper, keeping the lid on until just tender, about 3-5 minutes. Remove from heat, drain on paper towels and cool. Peel and seed avocados and with a melon baller, scoop out tiny balls ; Reserve. Wash endive and radicchio, . tear into tiny pieces and drain on paper towels. Peel and julienne both the pawpaw and the carrot. To make the dressing, crush garlic and ginger; add to lemon juice, salt, pepper and oil. Mix well. If scallops are large, halve and place with all the other ingredients in a bowl. Add dressing, toss and place decoratively in centre of serving plate.
