CHINESE PORK SALAD

- Dressing-
1/4 cup rice wine vinegar
2 tbsp soy sauce
2 tsp sugar substitute
2 tsp Chinese chili sauce with garlic
- Salad-
4 cups chinese cabbage -- shredded
1 bell pepper - capsicum -- 1/4" 7mm strips
2 tbsp olive oil
1 lb pork tenderloin -- 500gr 1/8" 3mm strip
In small bowl, combine all dressing ingredients; blend well.
In large bowl, combine cabbage, red pepper and peanuts.
In medium skillet, heat oil over medium-high heat. Add pork; stir-fry until no longer pink. Drain.
Add dressing and warm pork to cabbage mixture; toss gently to coat.
